Total time
Recipe type: Dessert
Cuisine: Italian
Serves: 1 scale
  • Gluten & Lactose-free Savoiardi (ladyfingers 300 gram)
  • 250 grams Lactose-free Mascarpone (from MinusL or some other dairy free brand, or you can use normal mascarpone if you're not allergic to Lactose.)
  • 2 to 4 tablespoons Amaretto (add to taste)
  • 2 cups fresh brewed Espresso
  • 3 Egg whites
  • 6 Egg yolks
  • 6 Tablespoons Sugar (I used Truvia sugar)
  • For garnishing : Some Cocoa powder or grated gluten-& lactose-free chocolate.
  1. Grab a scale that really is fat-free, this is very important!!
  2. Put your 3 egg whites in this bowl together with 3 table spoons of sugar and mix it with your mixer about 4 minutes until the mixture is really stiff and peaks, when this is done, put this bowl aside.
  3. Grab a different bowl, and put your 6 egg yolks in with the other 3 tablespoons of sugar.
  4. Mix this with your mixer until a uniform mass gets creamy, it's ready when the egg yolk has become a lot less bright in color.
  5. If this is so, then you can add 2 to 4 tablespoons Amaretto and Mascarpone, mix it again now with your mixer until a smooth mixture.
  6. If this is done, add very careful the stiff mixture of egg whites, and mix it with a spoon carefully through each other.
  7. Put the espresso in a little scale, and dip the savoiardi (ladyfingers) in the espresso. (Just dip them in, not too long otherwise they will break)
  8. Then put a whole layer of dipped ladyfingers in a transparent (oven) scale.
  9. Now put the Mascarpone mixture over it.
  10. Cover than the Mascarpone layer with a layer of dipped ladyfingers again.
  11. Cover the dipped ladyfingers with your remaining Mascarpone mixture.
  12. Garnish with cocoa powder or grated dark chocolate, and put it in the fridge!
  13. The taste is the best if you eat it right away out of your refrigerator.

I hope you guys enjoy! – Emma tiramisu
