Filled almond pastry. (Gevulde speculaas)

This is absolutely my favorite recipe when it becomes cold, and the holidays are starting.
Everybody loves it, and I have to make him actually already almost every weekend. It is delicious with the cold weather, a cup of hot tea or lactose-free chocolate milk, and you’re immediately in the for the famous Dutch  “Sinterklaas” mood!

Ingredients
  • Dough:
  • 135 Grams of rice flour
  • 50 Grams of glutinous rice flour
  • 90g Coconut blossom sugar
  • 2 Tablespoons cake and mixed spice
  • ½ Teaspoon baking powder
  • 1 Teaspoon xantham gum
  • Pinch of salt
  • 110 ML coconut oil
  • 2 to 3 Tablespoons almond milk or lactose-free milk
  • Filling:
  • 300gr Almond paste (from the health food store or make it yourself, you can find the recipe for homemade almond paste also on my website, you can search for it or click on the link below this recipe.)
  • 2 Eggs
  • 1 Tablespoon water
  • Sliced almonds
Instructions
  1. Preheat oven to 175 degrees, and spray or grease a baking tin.
  2. Do all the dry ingredients for the dough together in a bowl and mix well with each other.
  3. Put all the wet ingredients in there and knead to a smooth dough.
  4. If you have made a nice dough divide it into two pieces.
  5. Roll 1 piece of the dough into the shape of your baking pan and then put this piece of your dough already in your pan.
  6. Press the edges of your dough slightly.
  7. Put your 2 eggs in a small bowl and whisk it with 1 tablespoon water together.
  8. Grab another bowl, in which you crumble in your almond paste.
  9. Put in this bowl half your egg-water mixture and knead until it is smooth.
  10. Divide the mixture over the dough in the pan.
  11. Role than the other piece of dough into the shape of your baking pan and place it over the almond paste.
  12. Brush the top with the remaining egg mixture and garnish with the almonds.
  13. Bake the filled almond cake in 35 minutes.
