Homemade Potato Salad

What’s a barbecue without a nice salad? With this healthy potato salad you can surprise everyone with the delicious flavors and nice structure! It’s also a nice dish on it’s own, and you can try some other variations, like switch the regular potatoes for sweet potatoes. Enjoy!

  • 500 gram potatoes
  • 1 onion
  • Herb seasoning (like celery, red and green bell pepper, basil, garlic, parsley)
  • 4 tablespoons gluten and lactosefree mayonaise
  • 2 cloves garlic
  • Freshly ground pepper
  • Seasalt
  • A handfull of parsley
  • ½ hand of chives
  1. Peel the potatoes and cut them in half so they cook a lot faster. Put them in a pan filled with water and let them cook for about 15 – 20 minutes. When they are ready cooking, take the pan off the fire. Let them cool off for a couple of minutes.
  2. In the meanwhile, start chopping the onion and garlic in fine parts. The onionparts can be a little bit bigger then the garlic. Every person likes it different but this is my opinion.
  3. When the potatoes are cooled off, start cutting them in fine parts and put them in a big bowl. Add 4 tablespoons of mayonaise and stir it together. Add the chopped onion and garlic and add pepper and salt to taste. Stir this all together.
  4. Now start chopping the parsley and chives very fine. Add this to the rest of the blend and after that add the herb seasoning to taste. Start with a little bit and add more to taste. The same goes fort he pepper and seasalt as well, when the taste is not how you like it, add some more of this.
