Italian Cheesebreads

If you just found out that you have an allergy for gluten and lactose, and you know how “real” bread taste, the first time that you eat a pre-made gluten & dairy free bread, well let say how I felt.. I felt like, WHAT is this? Do I need to eat this dry “what they so called bread?” for the rest of my life? Well there was a no way for me! So I jumped in to the kitchen and made this recipe! It’s an all-time favorite, and you can switch so much with the spices, just whatever you like!

  • 150 grams of corn flour
  • 150 grams of quinoa flourl
  • 100 ml coconut - rice milk ( or any other milk by choice )
  • 300 grams of dairy free cheese
  • 4 full table spoons Italian Herbs (like, basil, parsley, oregano, thyme, sage leaf, bay leaf)
  • Fresh ground pepper
  • Fresh ground sea salt
  • 1 Tablespoon Gluten free Substitute (From the brand Orgran or any brand by choice)
  • 3 eggs
  • 50 ml of good quality olive oil
  1. Preheat your oven on 200 degrees (celsius)
  2. Grab a big mixing bowl, and put here all your flours and herbs, 1 table spoon of the glutenfree subsitute, and your fresh ground pepper and salt. Mix this.
  3. Do you have rasped cheese? Then put this through your mix. Don't you have rasped cheese, don't worry! I just grabbed 300 grams of lactose free cheese and rasped it myself..
  4. Add your 3 eggs, your milk, and your olive-oil, and then mix it with your dough hooks for your mixer until you get a nice substance. (Be aware, it's really sticky!)
  5. For the best results you can knead the mixture so everything whisks together very good.
  6. If you have all of this done, then grab little trays, and fill them with the mixture with a spoon. (You can put it in little cupcake forms)
  7. If you filled your cupcakes with the mixture, you can choose to add some seeds on it, whatever you like! I also added a little bit of fresh ground sea salt on top of them.
  8. If you are done with this you put them in your preheated oven, and bake them in 20 minutes.
  9. If they are done you can cool them off on a rack, and then just EAT them!
  10. Tip: It's delicious to eat them when they are a little bit warm, and you put olive oil and sprinkle some fresh ground pepper and salt over it, or put some cheese between it!
With these amount I baked 7 little breads.
